Cake Mix Oreo Cookies

This is one of my absolute favorite cookies.  They are a super soft chocolatey cookie sandwiched between a cream cheese frosting.   Below is also a Christmasy version with peppermint and food coloring in the frosting.

Cookies

2 pkg. Devil’s food cake

1 c. oil

4 eggs

Mix all ingredients. Roll into 1 in balls and bake 350 for 8 min.

Cream cheese filling

1 pkg. Cream cheese softened

3 c. powdered sugar

1 cube butter softened

Mix all ingredients and use as cookie filling.  You can roll the edges in sprinkles if desired to give them some color if desired.

Santa's Sandwiches

 To make these for Christmas you can add to the frosting:

1 tsp. peppermint extract
red or green food coloring
peppermint candies or candy canes crushed (optional)

After making the cookie sandwiches, crush peppermint candy and roll edges of filling in it.
