Avacado Black Bean Salsa
Quite possibly the best salsa and so healthy too! Much like pico de gallo but way better especially if you are an avacado lover like us!
Just Cook Already
2-3 tomato
es
4-6 avocados
1 cup of sweet white corn
1-2 sprigs green onions
a few sprigs of chopped cilantro or to taste, I like a lot!
1 can of black beans
, drained
1 lime
Salt
Tapatio hot Sauce
You can add seasonings like garlic powder or whatever you would add to your homemade guacamole if you want but I don't.
Place drained black beans and thawed corn into a large bowl.
Dice up the tomato and green onions and add them in the bowl.
Season with the salt and tapatio sauce to taste.
Mix everything around and then taste it to check seasoning.
Add chopped avocado and juice of lime and mix it around one more time (I do the avocado last so the little diced pieces don’t get all mushy in the initial mixing process). I changed some of the ratios from the original recipe. Play around with it to your liking. You can eat as is or with tortilla chips

Sticky Chex Mix
I am adding this picture so we have an idea of what this looks like, the blog I got this from made a holiday version by adding sprinkles and 1 cup candy cane dust, which you can make by putting candy canes in a food processor or coffee grinder. Yum I really want to try this!
1 cup karo syrup
1 cup sugar
1 1/2 cubes butter
1 large box Rice Chex
2 oz. sliced almonds (if you have time, you can toast them)
3 oz. coconut
In a large bowl, combine the cereal, almonds and coconut. In a saucepan, bring the corn syrup, sugar and butter to a boil. Boil 2 minutes. Pour over cereal mixture and mix well. Spread onto a cookie sheet or large sheet of wax paper to cool. Cover to store.

Johnny Carino's Garlicy Olive Oil
1 Tbl. rosemary
1 tbl. parsely
1 tbl. oregano
1/2 tsp. crushed red pepper flakes
1/2 tsp. salt
1/2 tsp. pepper
2 tsp. parmesan cheese
1/2 c. extra virgin olive oil
1 head garlic peeled and chopped

Blend spices and parmesan in food processor until finely chopped. Add to olive oil.
Heat oven to 375, lay chopped garlic on baking sheet lined with parchment paper. roast for 10 minutes and stir. roast for another 10 minutes until golden and crispy, make sure to watch it so it doesnt burn.
Serve garlic in bowl or plate add oil as desired when ready to eat. Serve with hot bread. yuuuuuummmmyyyy

APPLE Brickle dip
1 (8oz) cream cheese, softened
3/4 cup brown sugar
1/2 cup granulated sugar
1 tsp vanilla
1 (8oz) bag Heath toffee bits
Mix all ingredients together and serve with sliced apples or refrigerate till ready to serve. Makes about 3 cups.
