Power-packed pancakes

I like pancakes with a little umpff to them and these two recipes are just that.
1 c. flour
1/4 c. wheat flour
1/4 c. wheat germ, or more wheat flour if you don't have the wheat germ
1/2 t. baking powder
1/2 t. baking soda
1/4 t. salt
1 T. sugar
1 egg
2 egg whites
1 c. buttermilk, or substitute 1 c. buttermilk with 1/4 t. lemon juice
1 T. veg. oil
In small bowl mix dry ingredients.
In a large bowl whisk egg and whites until light and frothy. Alternately pour flour and buttermilk into egg mix, stirring as you mix. Then add oil and mix again. Cook pancakes and enjoy!-
