Stuffed Green Peppers


6 medium green peppers

1-1/2 pounds uncooked lean ground beef (or turkey burger)

1 cup cooked long grain rice

1/2 cup chopped onion

1/2 cup chopped celery

1 small tomato, seeded and chopped

1 garlic clove, minced

1 teaspoon salt

1/4 teaspoon pepper

1 can undiluted tomato soup

1/2 teaspoon dried basil

1/2 cup shredded cheddar cheese (or whatever kind you like, I have used mozerella and feta)


1) Cut off tops of peppers and remove seeds. In large kettle, cook peppers in boiling water for 3 minutes. Drain immediately and place inverted onto paper towels

2) In a large bowl, combine beef, rice, onion, celery, tomato, garlic, salt, and pepper. Spoon into peppers. Place on greased 9x13 baking dish. Combine soup and basil, spoon over peppers. (To make them a little more moist, I would add some soup to the mixture and then spoon some over top as well).

3) Bake at 350* for 55-60 minutes until beef is no longer pink. Sprinkle with cheese, bake 5 minutes longer until cheese is melted.


This recipe is easy and can be adapted well for smaller families (like us.) I made just two stuffed peppers by fourthing the recipe and it worked well!
