Black Bean and Cheese Quesadillas


sauce:
8 oz. sour cream
2 tomatoes
1/4 of a red pepper
1/4 of a red onion
1 avocado
1 tsp. cilantro
pinch cumin

in food processor blend above ingredients till smooth.

filling:
1 can black beans
1 can corn
2-3 chicken breasts cooked and cubed
3 c. shredded cheddar
12 tortillas

combine first 3 ingredients in bowl, place tortillas on baking sheet and layer with filling and cheese place tortillas on top and bake 450 for 8 min. till cheese is melted. serve with sauce.
