No Bake Chocolate Cookies

I know there are several variations of this recipe and I know most of you if not all have made these but I had to put them on here so we would have the recipe available on the blog.   These are such an easy chocolate oatmeal no bake cookie, such a classic and they freeze really well too.  Also try out the non chocolate peanut butter version No Bake Peanut Butter Cookies

2 c. sugar
1/4 c. cocoa
1/2 c. milk
1/2 c. butter
3 c. oatmeal
pinch salt
1 tsp. vanilla
1/2 c. peanut butter (optional) don't add salt if you add peanut butter

Makes about 24 cookies

NOTE: I like to half this recipe so we don't have so many cookies sitting around.  you can also freeze.  I have also used only 1 c. sugar on accident before and they were still really good, in fact I almost prefer them with less sugar.

Mix sugar and cocoa together, mix in milk, add butter and heat on stove until butter is melted.  Remove from heat and add remaining ingredients, if you like peanut butter add and allow to melt, place spoonfuls of mixture onto parchment or wax paper.  Allow to set up or if you can't wait, eat with a spoon!
