These are absolutely delicious. They have a sweet raisin filling sandwiched in between layers of a steusel type crisp. Yum, this is my grandma's recipe and always makes me think of her.
Filling:
2 1/2 c. raisins
1/2 c. sugar
3 TBL. cornstarch
1 1/2 c. water
5 TBL. lemon juice
Cook and stir constantly over low heat till thickened. About 5 minl. Cool.
Crumb Mixture:
3/4 c. butter
1 c. brown sugar
1 3/4 c. flour
1/2 tsp. salt
1/2 tsp. soda
1 1/2 c. oatmeal
Mix all ingredients. Press half mixture in greased 13x9 pan. spread filling. pat on remaining mixture bake 400 for 20 min. cut into bars.
