Salsa Chicken

This is such a simple, easy recipe that tastes great!  I have tortillas in the freezer at all times so that I can pull them out for quick easy meals like these and almost always have all the ingredients for this recipe on hand.  This is a great emergency meal.



1 lb. chicken or desired amount
1 1/2 cups salsa
3 tbl. brown sugar
1 tbl. mustard
optional:
rice
tortillas
cheese
sour cream
chips
tomatoes
green onions

Mix salsa, brown sugar and mustard, pour over chicken in baking dish.  You can also sprinkle with cheese and crushed tortilla chips.  Bake at 400 for 30 min. or until chicken is done. Shred with fork and serve with rice and tortillas and any condiments. I was thinking you could even add taco seasoning mix and black beans and corn.   Can also be done in the CROCKPOT.
