This is so yummy!
3/4 c. reduced-fat Asian sesame salad dresing (***note: same ingredient in the Asian chicken rice bowls shown several posts ago.)
1/2 c. creamy peanut butter
1 T. sesame oil
2 t. cider vinegar
1/4 t. pepper
grilled chicken breast strips
1 or 2 chopped cucumbers
1 red pepper, chopped
1/2 c. chopped green onions
1/4 c. grated carrot
8 bibb or Boston lettuces leaves-- I used Romain lettuce and it was great
chopped fresh cilantro, optional (I didnt' try this so I'm not sure how it would be)
mix first 5 ingredients (note to readers I only used the dressing + peanut butter and it was fabulous). In a large bowl mix remaining salad ingredients and top with dressing. Serve on lettuce leaves or mixed with lettuce or in a pita.
