This doesnt look like anything special but it had a great review on recipezaar, and when i made it it made a really light fluffy pancake. definitely a keeper except for my family the batch had to be doubled! I do have to say that sourdough pancakes are probably my favorite but who keeps sour dough starter around. From

1 egg
1 cup all-purpose flour
3/4 cup milk
2 tablespoons vegetable oil
1 tablespoon sugar
1 tablespoon baking powder
1/2 teaspoon salt
1Beat eggs with whisk until fluffy.
2Beat in all remaining ingredients until smooth.
3Heat griddle or pan.
4Pour about 3 tablespoons of batter in pan and cook until pancake is puffed and dry around the edges.
5Turn and cook other side until golden brown.
