This came from a Bisquick recipe, I found it on recipezaar.com. We ate it last night for dinner and it was quite good. It is very easy to prepare as well. I made it with potato wedges on the side and broccoli with cheese. Of course, you can serve whatever you like with it, just some suggestions!
Ok onto the recipe. Why do I always feel I must write instead of just post the dang recipe? I don't know. PS. I halved this recipe for just us.
2/3 cup buttermilk
boneless skinless chicken breast (the recipe calls for 8, of course I did not use that many)
1 cup cornflakes
1 cup original Bisquick mix or if you don't have it, all purpose flour
2 (1oz) packages of dry ranch dressing mix
cooking spray
1. Heat oven to 400 degrees. Spray baking sheet with spray.
2. Pour buttermilk into shallow glass or plastic bowl. Add chicken. Turn to coat. Let stand 5 minutes.
3. Meanwhile, in a 2 quart plastic bag, crush cereal with rolling pin. Add bisquick and dressing mix (dry) into the cereal bag. Remove chicken from buttermilk; discard remaining buttermilk. Add chicken to cereal mixture. Seal bag and shake to coat.
4. Place chicken in baking dish. Bake 45 to 50 minutes or until juice is clear.
