Vegetarian Egg Scamble

This is my favorite way to eat scrambled eggs.  Sometimes I will make this for lunch or even dinner and it is so healthy and filling!

1 whole egg (farm fresh eggs are the only way to go, they are worth the extra money)
2 egg whites
2 cloves garlic, minced
1/4 onion, chopped
1/4 green pepper or other, chopped
1 tsp. olive oil
baby spinach


Saute onion, pepper and garlic in olive oil until softened.  Scramble whole egg with egg whites in a bowl and then add to veggies along with a small handful of baby spinach.  Cook and stir scrambled eggs until done to desired consistency, spinach should wilt slightly.  Remove from pan and eat as is with slices of avacado or in a whole wheat tortilla.  I don't even add salt because it already has so much flavor.  I also like to experiment with other spices like curry, chili powder, ceyenne etc.  You can also switch out the veggies as well, asparagus, zucchini, tomato, snow peas etc.
