Chicken Potpie

2 Chicken breasts
3 carrots
3 potatoes
½ c. frozen peas
½ onion
2/3 butter
2/3 flour
2 c. chicken broth
1 ½ c. milk
pepper and salt to taste

Boil cubed chicken, remove from water and cook potatoes and carrots, onions in same water. When done add peas till warm, drain water and add chicken. In separate pan melt butter then add flour, cook for 1 min on medium, then add chicken broth and milk, boil till thick. Add potatoes, chicken etc. salt and pepper to taste. Place in oven pan and top with crust.

Pie Crust

1 ¼ c. flour
¼ tsp. salt
1/3 c. butter cut into small cubes
4 TBL. Cold water

Mix flour and salt, cut in cubes of cold butter. Add 1 TBL. Water at a time till moist. Roll out and place over chicken mixture. Bake in oven 450 for 8-10 min. till brown.
