CHOC CHIP RICOTTA PANCAKES WITH CHOCOLATE SAUCE

3/4 cup plain flour
1 tsp baking powder
2 eggs, separated
1 c. ricotta cheese
1/2 cup milk
1/2 cup of dark chocolate chips
2 TBL butter, melted
fresh strawberries and vanilla ice cream to serve.

CHOCOLATE SAUCE.
1/2 cup hazelnut spread
1/2 cup cream

~To make pancakes,whisk sifted plain flour & baking powder, egg yolks, ricotta & milk in in a large bowl until well combined.

~Beat egg whites in a small bowl with an electric until soft peaks form. Fold egg whites into batter with chocolate chips.

~Brush a medium , heated noon-stick frying pan with a little of the melted butter. Spoon 1/3 cup of batter into pan. Using a spatula or spoon, spread batter to form a circle. Cook over medium heat until bubbles appear on surface of pancake. Turn and cook until golden brown. Remove from pan and keep warm. Repeat with remaining butter & batter.

~To make chocolate sauce, combine hazelnut spread and cream in small saucepan. Stir over a low heat until smooth & warm.

~Serve pancakes with fresh strawberies & vanilla ice-cream. Drizzle with plenty of chocolate sauce.
