Latkes


2 pnds potatoes
1 onion
1 tsp salt
¼ tsp pepper
2 eggs

Peel and grate potatoes and onions. Wrap in tea towel and wring extra moisture out. Add seasoning and then beaten eggs. Heat 2 TBL. oil. In pan, add spoonfuls of potato mixture. Flatten and fry 5 min. each side. Serve with sour cream or applesauce. Makes 10
