Peppermint Cheesecake

2 c. Oreo cookie crumbs, rolled fine 3- 8 oz. packs of cream cheese, softened
1 c. sugar 3 eggs
3/4 tsp. vanilla 1 tsp. peppermint extract
2 drops of red food coloring 1 pint sour cream
3 tbs. sugar 1/2 tsp. vanilla
peppermint candy, crushed
preheat oven to 300* Crush whole oreos, to make 2 c. fine crumbs. Press evenly into the bottom of a 10 in. springform pan. Whip cream cheese in a mixer bowl; gradually add sugar; then add eggs one at a time. Stir in vanilla, peppermint extract, and red food coloring. Pour filling into crust. Bake 60 min. Whip sour cream; add sugar and vanilla. Spread on top of cheesecake and return to oven. Bake for 1- more minutes. Coll before removing sides from springform pan. Garnish with crushed peppermint candy. Refrigerate until ready to serve. Makes 10-12 servings.
