4 ounces rice noodles
1 16-ounce package frozen pepper and onion stir-fry vegetables
2 tablespoons cooking oil
12 ounces beef stir-fry strips
1/2 cup bottled Thai peanut stir-fry sauce
1. Cook noodles according to package directions. Drain and set aside.
2. In a large skillet cook the vegetables in 1 tablespoon of the hot oil over medium-high heat for 2 to 3 minutes or until just tender. Drain; transfer vegetables to a bowl.
3. In the skillet cook and stir beef strips in remaining 1 tablespoon oil for 2 to 3 minutes or until desired doneness. Return vegetables to skillet; add sauce. Stir to combine; heat through. Serve over noodles.
