Broccoli & Beef Stir-Fry


1/2 lb. boneless tender beef skeak 1 T. cornstarch
4 T. Soy Sauce, divided 1 t. sugar
1 t. fresh ginger 1 lb. fresh broccoli
1 1/4 c. water 4 t. cornstarch
3 T. veg. oil 1 onion, chunked or diced
Hot cooked rice
slice beef thin. Combine 1 T. each cornstarch and soy sauce with sugar, ginger and garlic in small bowl; stir in beef. Let stand 15 min.
Cut broccoli.
Combine water, 4 t. cornstarch and remaining 3 T. soy sauce; set aside. Heat 1 T. oil in wok or skillet over high heat. Add beef and stir-fry 1 min.; remove. Heat remaining 2 T. oil in same pan. Add broccoli and onion; stir fry 4 min. Stir in beef and soy sauce mixture. Cook and stir until mixture boils and thickens. Serve immediately over rice.
