This is a new recipe that I've found and we love! Its so easy, its fun!
Ingredients:
Pineapple
Chicken
Onion
A vegetable: I've used zucchini and green peppers and both are tasty.
Cut up chicken, onion, and vegetable into large chunks, and stick them on pre-soaked bamboo skewers. Coat with sauce (mix pineapple juice and 1/3 cup BBQ sauce) and barbeque for about 15 minutes (make sure you rotate them). I serve them with rice, we take the goodies off the skewers and mix it in with plain rice...perfect summer meal!
