Zucchini Bread


This is the best zucchini bread recipe that I've found.  Sweet, cinnamony and light!

3 eggs (beat until light and foamy)
Add next four ingredients, mix lightly but well:
1 cup oil (can sub 1/2 applesauce)
1 cup white sugar
1 cup brown sugar
3 tsp vanilla
3 cups grated zucchini
Mix together in separate bowl:
3 cups flour (part or all whole wheat if you wish!)
1 tsp baking soda
1 tsp baking powder
1 tsp salt
3 tsp cinnamon
 ½ cup nuts, chocolate chips, craisins or raisins (optional) I like mine without any of these
Add flour mixture to egg mixture, mix, and bake in 2 loaf pans (well greased) at 350 for 40min.When you take it out of the oven you can melt butter over the loaves and sprinkle with cinnamon and sugar (yummy!)
