Thai Chicken Salad

2-3 chicken breasts cooked and shredded or cubed
1 pkg spaghetti or linguini noodles, or thai rice noodles (best by far)
3 Tb sesame oil
4 Tb olive oil
4 Tb sugar
1 1/2 tsp chili powder
5 Tbs soy sauce
4 Tb peanut butter
lettuce (spring mix)
Optional snow or snap peas (boiled for a couple minutes), slivered carrots, cilantro, lime for squirting, chopped peanuts
Start noodles cooking according to package directions. Warm the oils, sugar, chili powder & soy sauce in the microwave for 45 seconds - 1minute. Add the peanut butter and mix until sauce is smooth. Mixchicken in with sauce and once noodles are drained, mix them in as well (and any extra vegetables). Serve over lettuce.
