Ginger Snaps

These are a delicious fall recipe with cinnamon and spice mixed into the dough and rolled in sugar.  They cook up perfectly with a barely crunchy exterior and a soft, chewy interior!


1 c. sugar
3/4 c. butter
1/4 c. molasses
1 egg
2 c. flour
2 1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ground ginger
1/2 tsp. ground cloves
1/4 tsp. ground cadamom (i left this out because I didnt have any and didnt notice a difference)
1/4 tsp. salt

Mix first 4 ingredients until well combined.  Add dry ingredients and mix lightly until combined.  Roll into balls, roll balls into sugar and bake 8 minutes.  Eat! Yum!

Makes 2 pans of 15 cookies, you definitely need a double batch of these babies!
