Spanish Rice:

These next 3 recipe are from my friend Amanda who will be joining us as a contributing cook! Several of the recipes that I have previously posted on here are from her. Welcome Amanda, we look forward to more of your recipes!

2 Tablespoons oil
2 Cups rice
1 can stewed tomatoes
3 cups water
Minced garlic to taste
1 bouillon cube ( you can use chicken stock instead of bouillon and water, whatever you prefer)
1/2 onion

Heat oil in a large skillet or saucepan. When hot, put the dry rice in and brown the rice (you need to watch it constantly or order for it not to burn) Put in everything else and bring to a boil. Reduce heat and cook for about 15 min. or until the rice is tender. Enjoy!
