Arroz Con Pollo

from taste of home cooking school i just throw everything in a pot and let cook together.  I love this recipe

1 lb Chicken more or less as desired
1 tbl olive Oil
1 can (14 ounces) Chicken Broth or use boullion
3 medium tomatoes, chopped or 1 can tomatoes
3/4 cup uncooked long grain rice
1/4 cup Kikkoman Soy Sauce
1 package (10 ounces) frozen peas, thawed
1 can (4 ounces) diced green chilies optional
In a large skillet, brown chicken in hot oil over medium-high heat. Remove chicken from pan; set aside. Drain pan. Combine chicken broth, tomatoes, rice and soy sauce in same pan; bring to a boil. Arrange chicken pieces over mixture; cover and simmer 30 minutes. Stir in peas and chiles; bring to a boil. Cover and simmer 10 minutes longer or until chicken juices run clear. Yield: 4-6 servings.
